It's that time again...

Swimsuit season, UGH!!!!!  This season brings more fear to women than anything else.  What makes it that way, the lighting in the dressing room, not having lost those last few pounds?  Well mine is the weight thing.  I dread putting on a swim suit and I usually miss out on fun times with my kids because of it.  So women with fuller figures do you cover up or just go with the flow?

This swimsuit is gorgeous for women trying to hide a tummy.  They are both 2 pieces and really show off your assets.

It hides the tummy and hips but emphasizes the bust with the halter top.

I also love that swimsuit now come in separates.  I am full figured but my top is a size smaller than my bottom so I can customize my sizes.  So women if you are still afraid of swimsuit season cover up with a bright color pareo or sarong and get out there and enjoy the summer!

Lather, Rinse Repeat...





It is finally Fall in Texas now, cool mornings, warm days so after a summer of no rain, 90 something days of 100 degree temps and the worst fire season ever, I will take it.   It is also time for me to refresh the look and content of my blog.  I know I have probably lost all of my readers since I haven't posted in so long, I hope you are still there and if you are let me know.  What would you like to see out of the blog to make it more readable, better and more interesting?  I want to hear from you so let me have it.

I know this is a short post but I need to start somewhere right.

School's out for Summer!!!!!

and yes my nerves are already frazzled with anticipation, but I got a break this week because the minions are at my parents and I am trying to relax. I really need to clean the house since they aren't around to destroy everything 5 minutes after I am done but I can't get motivated to do it.  I am enjoying the quiet while reading lots.

Do you have plans for your kids this summer, if so, what are they?  I am really interested because I have no plans like every other summer.  I know I should have done some sort of camp but, why?  There are so many out there and are really expensive for just 3 hours a day.  I am thinking about joining the Cedar Park Rec Center, they have great activities for the kids and me.

Are there any great vacation plans out there too?  We will probably end up at the beach at some time this summer but other than that we have no plans.

I will be posting sporadically, which is basically what I have been doing, with work and the kids it seems like there is not enough time in the day for it anymore.

I do love my readers and your comments inspire me to write more and get my creative juices flowing so please comment.  They make me smile.

Recipe Tuesday...Summer Fruit Pie

I am in the mood for pie today so I may need to bake later, this one from RealSimple sounds spectacular.


Summer Fruit Pie

Ngoc Minh Ngo
Serves 8
Hands-on Time: 30m
Total Time: 5hr 00m
Ingredients
  • 2 1/2 cups flour, plus more for the work surface
  • 1 teaspoon kosher salt
  • 1/2 cup solid vegetable shortening (such as Crisco), chilled
  • 1/2 cup (1 stick) plus 4 tablespoons unsalted butter, chilled and cut into small cubes
  • 1 large egg
  • 1 tablespoon white vinegar
  • 6 ripe peaches, each cut into 8 wedges
  • 1 pint strawberries, halved
  • 1/4 cup instant tapioca
  • 3 tablespoons fresh lemon juice
  • 1/2 cup plus 2 tablespoons granulated sugar
Directions
1. In a food processor, combine the flour, salt, shortening, and ½ cup of the butter until the mixture forms pea-size crumbs. Break the egg into a measuring cup and beat lightly; add the vinegar and enough cold water to measure ½ cup. Slowly add the egg mixture to the flour mixture, pulsing until a soft dough forms. 
2. Divide the dough in half. Shape each half into a flat disk. Wrap in plastic and refrigerate for at least 1 hour. 
3. On a lightly floured surface, roll out 1 disk into a 14-inch circle. Place in a 2-inch-deep 9-inch pie plate. 
4. In a medium bowl, gently toss the peaches, strawberries, tapioca, lemon juice, and ½ cup of the sugar. Spoon the fruit mixture into the pie plate and dot with the remaining 4 tablespoons of butter; refrigerate. 
5. Roll out the second disk of dough into a 14-inch circle. Drape it over the pie and trim the edge to a ½-inch overhang. Fold under, pressing to seal. Crimp the edge, if desired. Refrigerate for at least 30 minutes.
6. Heat oven to 425° F. Lightly brush the top crust with cold water and sprinkle with the remaining sugar. Cut several slashes into the top crust. Bake until golden, 18 to 22 minutes. Reduce heat to 375° F and continue to bake until the juices bubble, 30 to 40 minutes more.
7. Transfer to a rack and cool for 2 hours before serving.
Tip
When baking a fruit pie, put a foil-lined baking sheet on the bottom of the oven to catch bubbling juices.

Hello, again

I know I have been gone for a while. Our household has gone through a bout of tummy troubles, so much so that we had to cancel Z's birthday party. He was so disappointed, he thought he wasn't going to turn 5 because he didn't have his party. I finally convinced him that whether he has a party or not he will turn five.

When we all got well we went for one last trip to the lake house for some late summer fun, riding jet skis seemed to be the hit this time around. J even tried to get up on skis, he almost got up but then fell to hard and didn't want to try again. Z finally got enough bravery to jump off the diving board. Once he finally jumped off he didn't want to stop, I think he jumped off of that thing a hundred times.





So we now have to get back to the task at hand and get ready for school for me and the boys. I am taking 3 classes this semester in pursuit of my Psychology degree, only 60 more hours to my Bachelors degree, so hopefully by the time I am 40 I will know what I want to be when I grow up.
